Pink salad dressing? How did I mix up such a crazy color? Simple, easy and you can do it too! Why stick with just oil and vinegar when you can have such entertaining colors on your plate! All you need is a blender and some fresh raw veggies on hand and you will be well on your way to a whole host of new and delicious salad dressings. Read on for the super easy directions below and have fun! The only caveat is that I don’t use measurements for the ingredients. I really just throw them together and use my taste-buds to get it right. Hope you don’t mind.
Beet Pink dressing:
1 grapefruit, peeled, pith and seeds removed
1 smallish sized beet, peeled and cubed
small piece (maybe 1/2 inch) of fresh ginger, peeled
couple of spoonfuls of tahini (optional, but adds creaminess)
juice of one lemon
2 or so Tbls. of olive oil or any oil besides vegetable oil you have on hand
salt and pepper to taste
fresh herbs
super easy directions:
– put all ingredients in a blender and mix!
– taste, adjust for seasonings.
– if too thick then add either more lemon or water (depending on how you like it to taste)
And that is it! Try out different vegetables in your mixtures. I sometimes start with just plain raw carrots and add in raw ginger, onion, then the oil and lemon, then add in a splash of apple cider vinegar or mustard, some herbs and ta da, you have something tasty and nutritious to put on your salad.
